Summer … the season of sunshine, backyard barbecues, and cold, delicious cocktails! I have been testing my bartending skills lately with some tasty new summer themed cocktails and these are my new go to’s. I seriously can’t quit them — and honestly, I don’t really want to!
Frozen rosé : YES please! I love the watermelon combo with it too, so refreshing and so summer.
Blend 1 cup frozen seedless watermelon chunks with 12 ounces rosé (½ bottle), ¼ cup sugar, ¼ teaspoon salt. Blend and serve. Add a few more ice cubes and blend again, if slushiness is not to your liking! If you have more prep time, try freezing the rose overnight in an ice cube tray. This recipe makes enough for 2 servings!
Most people either love coconut or hate — I LOVE it and it just always makes me feel like summer! This recipe is a low cal option too.
Combine 1 1/2 cups coconut water (flavored or plain), 1 cup champagne (or white wine), 1/2 cup pineapple juice (or other juice; OJ is my second favorite!), 1/4 cup to 2 cups fruit (frozen or fresh…I prefer berries, mango, and pineapples!), and a splash grenadine! Refrigerate and enjoy in an hour. Again, this recipe is about 2 servings.
You can’t do summer without sangria! A white, peach sangria is my number one.
